Cordial Cherries November 22, 2003 - 6:24 a.m. As per Ami's request, here's a recipe for Chocolate Covered Cherries, aka Cordial Cherries. 1 cup semi-sweet chocolate chips - Place both kinds of chocolate chips into the top of a double broiler [Don't forget to put water in the bottom half], add shortening and melt. Cool to 78° - Cream butter with sugar. Add milk, vanilla, and almond extract. If mixture is too sticky, add up to 1/4 cup additional sugar. - Mold a small amount of this mixture around each cherry, covered completely. Cover and chill. When ready to dip into chocolate coating, heat cooled chocolate to 88° over warm water, maintain temperature while dipping. - Drop each covered cherry, one at a time, into the chocolate; roll to coat completely and remove with a fork. Draw fork across the rim of pan to remove excess chocolate. Drop from fork, upside down, onto waxed paper, swirling chocolate for decoration. - Chill 20 minutes. Store in a cool place 1-2 days before serving/eating. When Chris and I first started dating, he told me this was one of his all time favorite dessert type treats. So instead of simply buying him a box during Christmas, I looked for a recipe and made them for him. At the time, I was working at a bakery, so I was able to get little petite fore cups that fit each cherry perfectly. So it looked just like a bought box of chocolates... without the nice box. He loved it, and said they were better than the other boxes people bought for him. Then again, people often say nice things about their gifts. This recipe is the main reason why I actually own a double broiler. The only other time I've used it, was to melt some chocolate to drizzle over mini Oreo cheesecakes.
